Salmon Croquettes
1, 8-ounce can salmon, 1, 3 1/2-ounce can tuna fish, 1 onion, chopped, 1 cup cooked rice, cooked, 2 eggs beaten, black pepper to taste, flour for dredging, corn oil for frying In a bowl, mix together salmon, tuna fish, chopped onion, cooked rice and beaten eggs. Roll mixture into balls, the roll in flour. Flatten slightly with palm of hand and fry in oil, turning once until golden brown. Baked lenguado (flounder) with lemon 1, 1/2 pounds flounder or sole fillets, 1 teaspoon salt, 1/8 teaspoon pepper, 1/4 cup melted butter, juice of 1 lemon, 2 teaspoons finely minced onion, finely chopped fresh parsley, paprika Cut fish into serving-size pieces; arranged in a buttered, shallow, baking dish. Sprinkle fish with salt and pepper. In a bowl or measuring cup, combine melted butter, lemon juice and minced onion; pour over fish. Sprinkle with paprika; bake at 325° for about 30 minutes, or until fish is cooked through. Garnish with chopped parsley. Serves 4.
