Market Cheese Under Scrutiny |

Most artisanal or handmade cheeses (quesos frescos) on sale in Guadalajara's covered markets and tianguis are not pasteurized and may present a health risk, a Universidad de Guadalajara (UdeG) researchers said this week.
Guadalajara A recent study carried out by Maria del Refugio Torres at the UdeG's Biology and Engineering campus showed that parasites such as E Coli and Salmonella to be present in a number of samples taken from cheeses sold in the city's markets. Torres said the presence of these bacteria is probably the result of poor storage and handling. The most popular quesos frescos sold in Mexico are adobera and panela. |
