Stylish Restaurant Renews Its Look Print E-mail

Renovations are nearing completion at the Santo Coyote restaurant in Guadalajara. To celebrate the eatery's seventh anniversary, owner Gerardo Monroy has changed the layout, while adding seating and event space to the Spanish mission-inspired restaurant, popular with fashionable Tapatios and foreigners alike. Gone are two of the thatched-roof seating areas on Santo Coyote's well-known patio. More than one million pesos have already been invested in the garden ­- adding plants, sculptures and fountains. Cristina Muñoz, the restaurant's publicist, says all the plants are native to Mexico and were chosen because they attract bees and butterflies, adding vital energy to the grounds.
This all part of Monroy's desire to infuse Santo Coyote with Feng Shui, the Chinese method of achieving balance and harmony through arrangement of space. Even the timing of the restaurant's renovations is significant in Feng Shui. "At a cellular level there is a renovation every seven years and so it a good time to bring about change in a space as well," says Muñoz.
Second-floor seating has been opened, looking out onto the patio below and decorated with a mural depicting all the classic figures of the loteria (lottery). "Our intention at Santo Coyote is to bring what is Mexican to the rest of the world," says Muñoz. "The loteria is one of the most Mexican of things."
Still under renovation are the restaurant's kitchen and the long-awaited, massive second-floor discotheque and event space, Santo Cachorro. The hall is being designed to evoke the look of an old mission church's sanctuary, and will feature a large outdoor terrace as well. But perhaps the most significant change coming for Santo Coyote regulars is the additional of a large wine cellar. The Vinos America chain assisted the restaurant in putting together the selection. With over 350 labels to choose from, clients may browse the selections and order either a bottle or by the glass.
Muñoz says that renovations are scheduled for completion by February of next year.
