With the average lifespan of a Guadalajara restaurant not much longer than that of a fruit fly, standing out among the constant influx of new competition is a difficult task. I think that's especially true for establishments that serve Italian cuisine, a genre for which we have no shortage in this city.

Mezcal Leaves The Worm Behind

Mezcal distillers will stop dropping a worm into each bottle of liquor this month, ending a centuries-old tradition. The Mexican government will outlaw the practice on February 10 in an effort to improve the smoky-flavored beverage's image and production standards. According to the government, the worms impart fat globules into the beverage, diminishing its quality. Distillers, mostly in Oaxaca, are protesting the decision, arguing the worm has made mezcal famous around the world.
