Late last month, University of Guadalajara (U de G) scientists introduced the country to a new hybrid corn they claim will curb malnutrition and even enhance the flavor of a variety of corn-based snacks.

Rock star Santana plans to open three authentic Mexican restaurants in San Francisco in the next four months. The eateries will be called Maria Maria, after one of his most famous songs. Santana, 59, left the southern Jalisco town of Autlan at the age of seven for California.

On the streets of Beijing, the smell of carne asada and gringas pours onto the street from the first Mexican-owned restaurant chain to open its doors in China. El Fogoncito, an international food chain, is hoping to introduce a rare treat to the Chinese: the street food of Mexico.
